Controller/Associate General Manager

Jody has been a part of Trap Enterprises for over 16 years. She has grown with all associated companies and is now the Controller Associate General Manager for the company that runs desaki. She was present through the development and construction of desaki. Her commitment to the company has truly made her a vital asset to the every day functions and success of the restaurant.

Jody is most proud of the accomplishments of her son Zack and enjoys spending her time outside of desaki with him.



General Manager

Cara is the daughter of the Trapasso family and proudly serves as desaki’s Restaurants General Manager. She graduated with a Bachelor’s degree in Hotel and Restaurant Management from Penn State University, Main Campus. Her responsibilities include restaurant operations, advertising, social networking, staff scheduling, procedures, customer service within the restaurant, and oversees the performance of all employees.

Cara’s dynamic personality helps create a welcoming, fun and energizing experience for our guests. The Trapasso family is very proud of their daughter’s accomplishments.


Head of Bar

Matt started his employment with the Trapassos in 1989/90 when he managed Hoola Hoops on Main Street in Stroudsburg. Matt assisted with the opening of desaki five years ago and is an extremely loyal, faithful, and dedicated asset to the company.

Matt is in charge of bar inventory, scheduling of the bartenders, and designing unique and creative cocktails. By keeping up with the latest trends in the alcohol industry, he creates beautifully presented & delectable tasting cocktails. He also assembles the unique music assortment that desaki is known for.



Master Hibachi Chef

Mickey has been at desaki since its inception and is the Master Hibachi Chef. He is in charge of recruiting, scheduling, and training our Hibachi chefs. His hands-on training focuses on a unique fire show, guest interactions, and all forms of customer communication.

Mickey has been married to his wife Linda for five years and together they treasure their two children, Bryan (4) and Brenda (3). When not at desaki, he enjoys spending as much time with his family as possible.

Featured on billboards located around the Pocono Mountains, Mickey is dedicated to ensuring that all guests have an entertaining and unsurpassable dining experience at desaki. His commitment, strong virtues, and honesty make him an asset to the restaurant.



Executive Chef

Ryan is the Executive Chef at both desaki Restaurant and the Garden at desaki. Graduating first in his class at Northampton Community College in 1998 with a Culinary Arts Degree, Ryan illustrates his passion for his culinary craft by creating spectacular dishes for a wide range of palate and functions. With impeccable credentials, his duties include overseeing and performing daily kitchen operations and interaction and implementation of spectacular event cuisine.

Prior to his employment at desaki, he was the Executive Chef at the Country Club of Scranton, Fauchere, Pocono Manor, and the Westmorleland Club.  In his spare time, Ryan enjoys golfing, skydiving, rock climbing, and spending time with his wife of seven years, Melanie. He is the proud parent of their dog, Meatloaf.



Facilities Engineer

Damon has been desaki’s proud Facility’s Engineer since its inception. His duties include all maintenance and daily up-keep at desaki. His top priority is ensuring that desaki maintains its high standards for cleanliness and impeccable presentation.

Damon cares for his two children, who attend high school locally. He loves to spend time with his children and his dog, Ruppy. His favorite holiday is Halloween.
